Issue description:
If the patient's gender field is set to "Not Specified/Unknown" in Denticon, the gender does not bridge over to XVCapture. The field is left blank in XVCapture not allowing the office to move forward with capturing x-rays.
Signs:
Steps to reproduce:
- Access any patient with an unknown/not specified sex in Denticon.
- Launch XVCapture.
- In XVCapture, note that the gender field bridges over blank.
